Every mattress on sale is one of four things wearing a different name. Brands invent language — "adaptive comfort layer", "responsive support system" — to make a category with four real options feel like a category with forty. Once you can identify the construction, most of the marketing stops working on you.
Here is what each one does, and what we have measured it doing.
All-foam
A stack of foam layers, usually a firmer polyurethane base with memory foam or a softer polyfoam on top. No springs anywhere.
What it is good at. Motion isolation, by a distance. Our best all-foam result produced an accelerometer reading at the far edge of the bed that we could not distinguish from background vibration. Pressure relief is also strong, because foam conforms to the shoulder and hip rather than pushing back at them.
What it is bad at. Heat and edges. Foam is a closed-cell material with almost no airflow, so it warms up under you and stays warm — our all-foam measurements range from +3.4°F to +6.3°F across eight hours, against +1.8°F for the coolest coil mattress. The perimeter has nothing structural in it, so it collapses when you sit on it.
Who should buy it. Couples where one person's movement wakes the other, side sleepers on a budget, and anyone under about 230 lb who has slept well on foam before.
Innerspring
A steel coil support unit with a thin comfort layer over it. The traditional construction, and the one that mostly disappeared from the online category before Saatva brought it back.
What it is good at. Airflow and support. Coils leave space for air to move, which is why the two coolest mattresses we have measured are both coil-heavy. A properly built coil unit also resists sag far better than foam, because steel does not take a permanent compression set the way polyurethane does.
What it is bad at. Motion transfer and pressure relief. Springs transmit movement across the bed, and a thin comfort layer means the shoulder and hip take more concentrated pressure.
A note on coil-on-coil. The premium version, used by Saatva, puts a layer of pocketed comfort coils on top of a base coil unit. It costs more to build and it measurably outperforms foam-over-coil above about 200 lb, because the upper coils are doing structural work from the first inch rather than after two.
Hybrid
A pocketed coil support core with a substantial comfort layer of foam, memory foam or latex on top. The dominant construction in the online category, and the one we recommend most often.
What it is good at. Nearly everything, to a decent standard. You get most of foam's pressure relief, most of a coil unit's support and airflow, and usable edges from the reinforced perimeter row that almost all hybrids include.
What it is bad at. Nothing badly, and nothing brilliantly except where a specific model is built for it. A hybrid is the safe answer when you do not have one dominant problem to solve.
The zoning question. Better hybrids vary the coil gauge under the hips so the pelvis meets more resistance than the shoulders. That is what allows a medium mattress to work for a side sleeper. Plenty of brands print "zoned" and change nothing; you can verify it by pressing firmly with a flat palm at shoulder height and again at hip height and feeling for the difference.
Latex hybrid
Talalay or Dunlop latex over a coil unit. Structurally a hybrid, but the comfort material behaves so differently that it is worth treating separately.
What it is good at. Durability and temperature. Latex has an open cell structure, is pin-cored with ventilation channels, and does not develop compression set. Our three-year sag measurement on a latex hybrid was 0.2 inches, the smallest figure in our records, and its eight-hour heat rise was +2.1°F.
What it is bad at. Motion transfer, weight and price. Latex is bouncy, which is motion transfer by another name. A Queen weighs 120 lb or more. And it is the most expensive construction per inch of anything here.
The feel divides people. Latex pushes back faster than you press it. You sleep on it rather than in it. Two of our three testers preferred it to every foam mattress they had tried; the third could not settle on it at all.

What construction does not tell you
Firmness. There are soft hybrids and firm foam mattresses, and construction predicts feel far less reliably than most guides imply.
